Marinade:
- 1/4 cup olive oil
- 4 cloves garlic minced
- 1 tablespoon lime juice from 1/2 lime
- 1 tablespoon Cajun spice
- 1/2 teaspoon salt
Fajita Filling:
- 1 pound large shrimp peeled and deveined
- 2 bell peppers any color, sliced
- 1/2 medium onion sliced
- 1/4 cup cilantro chopped
- 2-3 teaspoons lime juice from 1/2 lime
Toppings/Serving:
- 1 avocado sliced
- 1 lime cut into wedges
- Flour tortillas

Marinate: Whisk together olive oil, garlic, lime juice, Cajun spice, and salt in a small bowl. Divide in half.
Prep: Slice bell peppers and onions. Pat shrimp dry with a paper towel.
Marinate Shrimp: Add shrimp to one half of the marinade; toss to coat.
Cook Shrimp: Heat a skillet with oil. Saute shrimp in a single layer until pink, 1-2 minutes per side. Remove to a plate.
Cook Veggies: Saute bell peppers and onions in the same skillet until softened and golden, about 10 minutes.
Combine: Return shrimp to the pan. Add cilantro and a squeeze of lime juice. Toss to combine.
