- 4 medium Roma tomatoes
- 1-2 jalapenos adjust for desired heat
- 1/2 white onion roughly chopped
- 4 cloves garlic unpeeled
- 1 pound tomatillos husked and halved
- 1/4 cup fresh cilantro
- Juice of 1 lime
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Get Recipe Ingredients
Roast: Preheat oven to broil. Place tomatoes, jalapenos, onion, garlic (and optional poblano) on a baking sheet. Broil for 10-15 minutes, turning occasionally, until charred.
Prep Tomatillos: While vegetables roast, boil a pot of water and add tomatillos. Cook for 5-7 minutes until softened. Drain.
Peel & Combine: Let roasted vegetables cool slightly, then peel the garlic. Add all roasted vegetables, tomatillos, cilantro, lime juice, salt, and pepper to a blender
Blend & Taste: Blend until mostly smooth with some texture. Taste and adjust salt, pepper, lime juice, or heat with hot sauce.
Chill & Enjoy: Refrigerate salsa for at least 30 minutes before serving with tortilla chips or tacos.
