Ingredients
  

  • 4-6 corn tortillas
  • 1 cup shredded cheese Monterrey Jack, Cheddar, or a blend
  • Olive oil
  • Salt and pepper to taste optional

Optional Toppings:

  • Mexican crema
  • Diced tomatoes
  • Shredded lettuce
  • Salsa
  • Sour Cream
  • Guacamole

  • Cooked seasoned taco meat (ground beef, chicken, carnitas)
  • Chopped veggies - onions peppers, mushrooms

Instructions
 

  • Heat the pan: Place a skillet or griddle over medium heat and add a drizzle of olive oil.
  • Assemble the quesadilla: Lay one corn tortilla in the pan. Sprinkle generously with cheese, leaving a small border around the edge. Add any bonus ingredients you like.
  • Cook and flip: Cook until the cheese begins to melt and the tortilla turns lightly golden. Carefully flip with a spatula.
  • Finish cooking: Let the other side cook for another minute or two until the cheese is fully melted and the tortilla is slightly crispy.
  • Serve and Enjoy: Slice into wedges and serve immediately with your favorite toppings like Mexican crema, diced tomatoes, shredded lettuce, salsa, sour cream, and guacamole.
