These crispy Buffalo wings use baking powder for a shockingly good crunch. They're baked in the oven for ease, making them perfect for feeding a crowd during game day, parties, or a satisfying treat.

  • 2 pounds chicken wings cut into drumettes and flats
  • 2 teaspoons baking powder
  • 2 teaspoons kosher salt use half if using table salt
  • 4 tablespoons unsalted butter
  • 4 tablespoons Frank's RedHot Sauce
  • Blue cheese dressing for serving
  • Celery sticks for serving

Instructions
 

  • Prep the Baking Sheet: Line a baking sheet with foil, set a wire rack over it.
  • Dry the Wings: Pat chicken wings dry with paper towels.
  • Baking Powder Coat: Toss wings with baking powder and salt until evenly coated.
  • Arrange and Chill: Place wings on the rack, spacing them slightly. Refrigerate uncovered for 8-24 hours.
  • Preheat Oven: Set oven to 450°F (230°C), position rack in upper-middle.
  • Initial Bake: Bake wings for 20 minutes.
  • Flip and Continue Baking: Flip the wings and bake 15-30 more minutes until golden and crispy, flipping occasionally.
  • Make the Sauce: Melt butter and hot sauce together, whisking until combined.
  • Sauce and Serve: Toss baked wings in the sauce. Serve hot with blue cheese dressing and celery.
